As a child, I would spend my summers in the Dominican Republic. Doing what? Well, getting loved on by my second set of parents, being "fattened" up since I've always been flaca and generally indulging in all things not allowed back in NYC.
I don't have to tell you that summers in the Caribbean could be scorching. And air conditioning was not something that we had access to. Like...ever! So cool afternoon showers were welcomed (you haven't lived until you've danced in the rain). Also welcomed? Cool treats. Like helado.
Now, generally this is ice cream. But the helados of my childhood didn't always contain heavy cream. My favorite was helado de tamarindo. Basically a tamarind juice concoction frozen (usually in a little plastic bag) and consumed faster than the brain freeze could set in. Also my favorite (and not always available due to its high demand): helado de leche. Not ever as creamy as ice cream but containing a certain deliciousness that's hard to describe. Ice milk? Maybe.
I set out to recreate this childhood treat and ended up with Helado ala Coconut Delight. Because I'm awesome. And because you totally deserve to treat yourself!
I loved that this was an easy peasy lemon squeezy recipe. The next time I make it, I'm going to have the frog princess help. I didn't this first time. I so enjoyed mixing these ingredients while thinking back to way-back-when.
The best part is that I get to make way-back-when memories for the Frog Princess during this summer of courage! And yes, one of these pictures will make it into her summer journal. One day, I hope she'll get a big grin on her face looking back.
